What comes to mind when I think of the Autumn season? Anything and everything pumpkin! I want to have pumpkin spice coffee and tea, pumpkin smoothies, pumpkin soup and a yummylicious pumpkin pie…to start.

What is so special about pumpkins? I think they are simply beautiful. Also, they are very healthy to eat. Here are some nutritional facts about the pumpkin:

  • Contains Vitamin A, so very good for vision.
  • Helps with weightloss
  • Boosts your immune system
  • Pumpkin seeds can help your heart and boost your mood
  • Low in calories
  • Pumpkin seeds are rich in magnesium

When cooking with pumpkin, I like to add it to spaghetti sauce and chili (I usually add the pumpkin spice too). There are so many recipes for pumpkin. Check out these websites for pumpkin recipes:

This morning, I made a pumpkin smoothie and here is the recipe:


Serves 1

1/2 cup pumpkin puree (not pumpkin pie filling)

3/4 tsp pumpkin spice

3/4 cup cashew milk

5 ice cubes

1/2 packet vanilla protein powder (I used SoTru)

Put all ingredients in blender and blend away. Enjoy!
